What a Black Vegan Eats: Cozy & Comforting Plant-Based Eats

A day of delicious, nourishing, and budget-friendly plant-based meals!


Today’s menu is full of comforting and nutrient-packed meals that are easy to make on a budget. I started the morning with a warm bowl of oatmeal, enjoyed a colorful kale salad for lunch, and ended the day with a veggie plate packed with delicious sides. Eating vegan can be affordable, filling, and flavorful, and these meals prove just that!

Breakfast: Oatmeal



What I Ate: I started my morning with a warm and comforting bowl of oatmeal. It’s filling, packed with fiber, and easy to customize with different toppings!

Lunch: Rainbow Kale Salad



What I Ate: For lunch, I had a vibrant Rainbow Kale Salad, loaded with fresh veggies, nuts, and a delicious homemade dressing. It’s packed with nutrients and full of color!

Snack: Hummus & Carrots



What I Ate: I kept my snack simple with hummus and fresh carrots. This combo is full of fiber, protein, and healthy fats, making it a great mid-day energy boost.


Dinner: Veggie Plate





What I Ate: For dinner, I made a veggie plate with leftover kale salad, roasted sweet potato, quinoa, fresh veggies and avocado. This dish is nutritious, budget-friendly, and so easy to prepare!


Beverages: Water & fresh cold-pressed Juice



What I Drank: I drank water throughout the day, and had a fresh cold-pressed juice with lunch for a little natural sweetness.



Final Thoughts


Today’s meals were simple, nourishing, and satisfying—proof that eating plant-based can be both delicious and effortless. Every bite was packed with flavor and nutrients, leaving me feeling energized and full throughout the day.
