Ingredients:
2 cups uncooked rice (or 1 cup cooked)
1 cup broccoli florets
1 cup bell peppers, sliced
1 cup carrots, sliced
1 cup snap peas
1 small onion, chopped
3 cloves garlic, minced
2 tbsp soy sauce (or tamari for gluten-free)
2 tbsp hoisin sauce
1 tbsp vegetable oil
1 tsp sesame seeds (optional)
1 tsp grated ginger (optional)
Instructions:
Cook the Rice:
Cook 2 cups of rice according to package instructions. Set aside.
Prepare the Stir Fry:
In a large pan or wok, heat 1 tbsp vegetable oil over medium-high heat.
Add the chopped onion and minced garlic. Sauté until fragrant and the onion is translucent.
Add the broccoli florets, sliced bell peppers, carrots, and snap peas. Stir-fry for about 5-7 minutes, or until the vegetables are tender-crisp.
Add the Sauce:
Stir in the soy sauce and hoisin sauce. Mix well to coat all the vegetables.
If using, add the grated ginger and sesame seeds, and stir to combine.
Serve:
Serve the stir-fried vegetables over the cooked rice.
