This week, we're making Stuffed Peppers, a colorful and nutrient-packed dish that's as delicious as it is economical. Filled with a hearty mixture of rice, black beans, and vegetables, these stuffed peppers are sure to be a hit at your dinner table.

4 large bell peppers: $4.00

1 cup uncooked rice (1 lb bag): $1.50

1 can black beans: $1.00

1 cup frozen corn: $1.00

1 small onion: $0.50

Garlic (1 bulb): $0.25

Spices (cumin, chili powder, paprika, salt, pepper): $1.50

Olive oil (small bottle): $2.00

Fresh cilantro (optional): $1.00

Prep Time | 20 minutes


Cook Time | 40-45 minutes


Serving Size | Serves 4


Ingredients:

4 large bell peppers (any color)

1 cup uncooked rice (brown or white)

1 can black beans, drained and rinsed

1 cup frozen corn

1 small onion, chopped

2 cloves garlic, minced

1 can diced tomatoes

1 tsp cumin

1 tsp chili powder

1 tsp paprika

Salt and pepper to taste

1 tbsp olive oil

1/4 cup fresh cilantro, chopped (optional)

1 avocado, sliced (optional)


Instructions:

Preheat Oven:

Preheat your oven to 375°F (190°C).


Prepare the Peppers:

Cut the tops off the bell peppers and remove the seeds and membranes. Set the peppers aside.

If desired, chop the pepper tops (excluding the stems) and add to the filling mixture.


Cook the Rice:

Cook 1 cup of rice according to package instructions.


Cook the Filling:

In a large pan, heat the olive oil over medium heat.

Add the chopped onion and garlic, and sauté until the onion is translucent.

Stir in the cumin, chili powder, and paprika, and cook for another minute.

Add the cooked rice, black beans, frozen corn, diced tomatoes (with their juice), and chopped pepper tops (if using). Mix well and cook until everything is heated through.

Season with salt and pepper to taste.


Stuff the Peppers:

Place the bell peppers in a baking dish.

Fill each pepper with the rice and bean mixture, pressing down lightly to pack the filling.


Bake:

Cover the baking dish with aluminum foil and bake for 30 minutes.

Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender.


Serve:

Garnish with fresh cilantro and sliced avocado if desired.

Serve hot and enjoy!
