Ingredients
2 cups white rice (uncooked)
1 cup mushrooms, sliced
1 cup frozen peas and carrots
1 cup broccoli florets, cut into small pieces
2 cups fresh spinach
1 onion, chopped
3 cloves garlic, minced
2-3 tbsp soy sauce (or tamari for gluten-free)
1 tbsp vegetable oil
1 tsp ginger, minced
Salt and pepper to taste
Instructions:
Cook the Rice:
Cook 2 cups of white rice according to package instructions. Once cooked, let it cool (cold rice works best for fried rice).
Prep the Ingredients:
Chop the onion, mince the garlic, and slice the mushrooms.
Cut the broccoli into small florets.
Rinse the spinach if needed.
Cook the Vegetables:
In a large pan or wok, heat 1 tbsp of vegetable oil over medium heat.
Add the chopped onion and minced garlic, and sauté until fragrant and the onion is translucent.
Add the sliced mushrooms and cook until they release their moisture and start to brown.
Add the broccoli florets, frozen peas, and carrots, and cook until they are tender (about 5-7 minutes).
Add the Spinach:
Stir in the fresh spinach and cook until it wilts down.
Add the Rice and Seasoning:
Add the cold cooked rice to the pan and stir to combine with the vegetables.
Pour the soy sauce and add the minced ginger over the rice and vegetables, and stir well to ensure everything is evenly coated and heated through.
Season with salt and pepper to taste.
Serve:
