Ingredients



For the Crispy Cornmeal Tofu:


1 block firm tofu, cut into strips (do not press)

1 cup cornmeal

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

Cooking oil spray


For the Waffles:


1 pack of vegan waffle mix (follow package instructions for additional ingredients)

Maple syrup (for serving)


Instructions



1. Prepare the Crispy Cornmeal Tofu:


Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.

Break tofu into cubes without pressing it. The natural moisture helps the coating stick.

Mix the coating: In a shallow dish, combine cornmeal, garlic powder, onion powder, smoked paprika, salt, and black pepper.

Coat the tofu: Toss the tofu pieces directly into the dry cornmeal mixture, making sure all sides are evenly coated. Press gently to help the coating stick.

Bake: Arrange the coated tofu on the prepared baking sheet, spray lightly with cooking oil, and bake for 25-30 minutes, flipping halfway through until crispy and golden brown.



2. Prepare the Waffles:


Follow the instructions on the waffle mix package. Typically, this involves mixing the waffle mix with water or non-dairy milk and oil.

Cook waffles in a preheated waffle iron until golden brown and fluffy.


3. Serve & Enjoy!


Plate the waffles and top with crispy cornmeal-crusted tofu.

Drizzle with maple syrup for the perfect balance of sweet and savory.
