With cookout season well underway, we thought it was only right to share some simple and tasty vegan side dishes that you can prepare to ensure that you'll be satisfied at any gatherings you might be attending. Vegan Coleslaw

Prep Time: 15 minutes | Cook Time: 0 minutes | Servings: 6-8


Kitchen Tools Needed:

  • Large mixing bowl

  • Medium mixing bowl

  • Whisk

  • Cutting board

  • Knife

  • Shredder or food processor

  • Measuring cups and spoons

  • Cover for the bowl

Ingredients

  • 1 small head of green cabbage, shredded

  • 2 large carrots, shredded

  • 1/2 red onion, thinly sliced

  • 1/2 cup vegan mayonnaise

  • 1 tbsp apple cider vinegar

  • 1 tbsp lemon juice

  • 1 tbsp Dijon mustard

  • 1 tbsp maple syrup

  • Salt and pepper to taste

Preparation

  1. In a large bowl, combine the shredded cabbage, carrots, and red onion.

  2. In a separate bowl, whisk together the vegan mayonnaise, apple cider vinegar, lemon juice, Dijon mustard, and maple syrup until smooth.

  3. Pour the dressing over the vegetables and toss until everything is evenly coated.

  4. Season with salt and pepper to taste.

  5. Cover and refrigerate for at least an hour before serving to let the flavors meld.



Mexican Street Corn (Elote)

Prep Time: 10 minutes | Cook Time: 10-15 minutes | Servings: 4


Kitchen Tools Needed:

  • Grill (or grill pan)

  • Grill brush

  • Small mixing bowl

  • Whisk or spoon for mixing

  • Brush for applying the mayonnaise mixture

  • Tongs (for turning the corn)

  • Knife

  • Cutting board

  • Measuring cups and spoons

  • Serving platter or plate

Ingredients

  • 4 ears of corn, husked

  • 1/4 cup vegan mayonnaise

  • 1/4 cup vegan sour cream

  • 1/2 tsp garlic powder

  • 1/2 tsp smoked paprika

  • 1 lime, juiced

  • 1/4 cup chopped fresh cilantro

  • 1/4 cup crumbled vegan feta cheese (optional)

  • Salt and pepper to taste

Preparation

  1. Preheat the grill to medium-high heat.

  2. Grill the corn for about 10-15 minutes, turning occasionally, until lightly charred.

  3. In a small bowl, mix together the vegan mayonnaise, vegan sour cream, garlic powder, smoked paprika, and lime juice.

  4. Once the corn is grilled, brush the mayonnaise mixture evenly over each ear of corn.

  5. Sprinkle with chopped cilantro and vegan feta cheese (if using).

  6. Season with salt and pepper to taste.

  7. Serve immediately.
