Savory Breakfast Sandwich

RECIPE

This Savory Breakfast Sandwich is a prefect vegan breakfast on the go! It's flavorful, comforting, convenient, and much healthier than fast food breakfast sandwiches. Give it a try!

 

Ready in 15 minutes | Makes 4 breakfast sandwiches

INGREDIENTS

  • 1/2 - 14 oz block firm tofu

  • 2 Tbsp vegan butter or vegetable oil of choice (you can also use water to reduce the oil in this dish)

  • 2 Tbsp nutritional yeast

  • 1/2 tsp Indian black salt

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp ground turmeric

  • 1/4 smoked paprika

  • 1 tomato sliced

  • Leafy greens of choice, we used spinach

  • 4 slices vegan cheese of choice

  • 4 English muffins, or vegan bread of choice (check labels to ensure there are no animal products)

  • Vegan breakfast meat of choice, we used tempeh bacon


INSTRUCTIONS

  1. Prepare vegan breakfast meat according to package instruction and set aside.

  2. Slice tofu into 1/2 inch squares and add to a plate or shallow dish. You should get about 8 slices.

  3. Add all seasonings to a bowl and mix together. Sprinkle half of the seasoning blend on one side of the tofu slices, then flip over and sprinkle the remaining seasoning on the other side.

  4. On the stove, heat a large pan over medium-high heat. Add your oil or butter and bring to a sizzle. Add the tofu slices and allow to cook for about 5 minutes until there is a light golden brown sear on the bottom of the tofu. Flip the tofu slices over and add a slice of vegan cheese to 4 of the slices of tofu. Cover the pan with a lid and allow to cook for another 3-5 minutes until steam has formed in the pan and the vegan cheese slices have melted. Turn off the heat and set aside.

  5. While the tofu is cooking, slice your English muffins (or bread of choice in half, and toast them.

  6. To assemble the sandwiches layer baby spinach on the base of the English muffin, followed by vegan cheese covered tofu slice, a tofu slice without vegan cheese, vegan bacon or your breakfast protein of choice, a slice of tomato, and the other half of the English muffin.

  7. Enjoy!


TIPS

  • Black salt, also known as or kala namak, is an Indian volcanic rock salt. It is commonly used in vegan dishes to provide an egg-like flavor due to the significant presence of naturally-occurring sulfur in the salt. It can be purchased in Indian markets or online here and here.
