Ingredients
1 large bunch kale, stems removed and chopped
1 ½ avocados (1 for massaging, ½ diced for topping)
2 tbsp nutritional yeast
½ tsp garlic powder
½ tsp salt
1 cup shredded carrots
1 cup shredded red cabbage
1 cup diced cucumber
1 cup diced tomato
1 yellow bell pepper, diced
Instructions
1️⃣ Massage the Kale:
In a large mixing bowl, add chopped kale, 1 avocado, nutritional yeast, garlic powder, and salt.
Use your hands to massage the avocado into the kale for 2-3 minutes until the leaves are softened and coated.
2️⃣ Assemble the Salad:
Add shredded carrots, red cabbage, diced cucumber, diced tomato, and yellow bell pepper.
