Ingredients


  • 1 large bunch kale, stems removed and chopped

  • 1 ½ avocados (1 for massaging, ½ diced for topping)

  • 2 tbsp nutritional yeast

  • ½ tsp garlic powder

  • ½ tsp salt

  • 1 cup shredded carrots

  • 1 cup shredded red cabbage

  • 1 cup diced cucumber

  • 1 cup diced tomato

  • 1 yellow bell pepper, diced


Instructions


1️⃣ Massage the Kale:

  • In a large mixing bowl, add chopped kale, 1 avocado, nutritional yeast, garlic powder, and salt.

  • Use your hands to massage the avocado into the kale for 2-3 minutes until the leaves are softened and coated.


2️⃣ Assemble the Salad:

  • Add shredded carrots, red cabbage, diced cucumber, diced tomato, and yellow bell pepper.

  • Gently toss to combine.


3️⃣ Top & Serve:

  • Add the remaining ½ avocado, diced, on top of the salad.
