Peach Cobbler

Peach cobbler is a simple and comforting dessert that comes together in a few steps. The juicy sweetness of baked peaches serves as the perfect compliment for the crisp and tender crust that tops the cobbler. Fresh, frozen, and even canned peaches all yield a delicious result, making it a perfect dessert to enjoy anytime of the year.


Makes 8-10 Servings


INGREDIENTS

Peach Filling

  • 8 peaches, halved, pitted, and peeled (you may use fresh, frozen, or canned peaches)

  • 1/3 cup coconut sugar, you can also use brown sugar or cane sugar

  • 1 ½ tsp ground cinnamon

  • ½ lemon, juiced

  • 2 Tbsp flour

  • 2 Tbsp vegan butter

Cobbler Topping

  • ¾ cup flour

  • 1/2 tsp sea salt

  • ¼ cup coconut sugar, you can also use brown sugar or cane sugar

  • ½ tsp baking powder

  • 1/3 cup melted vegan butter

  • ½ cup vegan milk

  • ½ tsp ground cinnamon

INSTRUCTIONS

  1. Preheat oven to 375 F.

  2. Slice each peach into 8-10 wedges. Add all peach filling ingredients to a square baking dish and mix until well combined.

  3. In a mixing bowl, all cobbler topping ingredients and mix until well combined. Dollop across the surface of the peach filling until evenly covered.

  4. Place cobbler on a baking sheet and bake for 30-35 minutes, until the crust is golden brown and the peach filling is bubbling.

  5. Remove from oven and allow to cool for at least 10 minutes before serving. Enjoy with you favorite vegan ice cream or whipped cream.
