  • 1 cup full-fat coconut milk

  • 12 oz pasta of choice


Instructions


Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.

  2. Cook pasta according to package instructions. Drain and set aside.


Step 2: Sauté the Aromatics

  1. Heat olive oil in a large skillet over medium heat.

  2. Add onions and cook for 3-4 minutes until soft.

  3. Stir in garlic and cook for another minute.


Step 3: Cook the Mushrooms

  2. Stir in paprika, thyme, and black pepper.

  3. Pour in coconut milk, stirring continuously until the sauce thickens (about 5 minutes).

  1. Toss the cooked pasta into the skillet and mix until well-coated with the sauce.
