Loaded Vegan Fries

Makes 4 Servings | Ready in 30 minutes


Ingredients

  • 2 large Russet potatoes

  • 1 block Firm tofu, crumbled

  • 1 medium Diced tomatoes, chopped

  • 1 bag shredded vegan cheese

  • 1 can black beans, rinsed and drained

  • Olive oil or vegetable oil

  • Garlic powder

  • Paprika

  • Chili powder or cayenne (optional for spice)

  • Salt and pepper


Preparation

  1. Prepare the Fries

    • Preheat your oven to 425°F (220°C).

    • Wash and peel the russet potatoes (peeling is optional for a rustic look). Slice into thin fries or wedges.

    • Toss the potato slices with a drizzle of olive oil, 1 tsp garlic powder, 1 tsp paprika, salt, and pepper.

    • Spread the fries evenly on a parchment-lined baking sheet. Bake for 25–30 minutes, flipping halfway through, until golden and crispy.

  2. Cook the Tofu

    • Crumble the tofu into a bowl to resemble ground meat.

    • Heat a nonstick skillet over medium heat. Add the tofu and season with 1 tsp garlic powder, 1 tsp paprika, 1/2 tsp chili powder (if desired), salt, and pepper.

    • Cook for 5–7 minutes, stirring occasionally, until golden and slightly crispy.

  3. Warm the Black Beans

    • In a small saucepan or microwave, heat the black beans with a pinch of salt and garlic powder for extra flavor.

  4. Melt Vegan Cheese

    • When the fries are done baking, transfer them to an oven-safe tray or large plate. Sprinkle the shredded vegan cheese over the hot fries. Place back in the oven for 5 minutes, or until the cheese melts.

  5. Assemble the Loaded Fries

    • Arrange the cheesy fries on a serving plate.

    • Top with the cooked tofu, warmed black beans, and fresh diced tomatoes.

  6. Optional Garnishes

    • Add fresh cilantro, jalapeños, or a drizzle of hot sauce for extra flavor.
