Ingredients


For the Ravioli Filling:


  • 1 block firm tofu, pressed and crumbled

  • 2 cups fresh spinach, finely chopped

  • 2 cloves garlic, minced

  • 2 tbsp nutritional yeast

  • 1 tsp lemon juice

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt


For the Tomato Sauce:


  • 1 can crushed tomatoes

  • 2 cloves garlic, minced

  • 1 small onion, diced

  • 1 tbsp olive oil

  • 1 tsp dried oregano

  • ½ tsp dried basil

  • ½ tsp salt

  • ½ tsp red pepper flakes (optional)


For Assembling the Ravioli:


  • 1 pack vegan wonton wrappers

  • Water (for sealing the edges)


Instructions


Make the Ravioli Filling:

  • Sauté the spinach: In a pan over medium heat, cook the chopped spinach for about 2 minutes until wilted. Remove from heat and set aside.

  • Prepare the tofu mixture: In a bowl, crumble the pressed tofu and mix it with nutritional yeast, lemon juice, garlic powder, onion powder, salt, and minced garlic.

  • Combine: Stir the sautéed spinach into the tofu mixture and mix well. Set aside.


Make the Tomato Sauce:

  • Sauté the aromatics: Heat olive oil in a saucepan over medium heat. Add the diced onion and minced garlic. Cook for 3-5 minutes until softened.

  • Simmer the sauce: Add the crushed tomatoes, oregano, basil, salt, and red pepper flakes (if using). Simmer for 10 minutes, stirring occasionally. Remove from heat.


Assemble the Ravioli:

  • Prepare a workstation: Lay out the wonton wrappers on a clean surface. Keep a small bowl of water nearby.

  • Fill the ravioli: Place about 1 teaspoon of the tofu-spinach filling in the center of each wrapper.

  • Seal the edges: Lightly wet the edges of the wrapper with water, then fold into a triangle or place another wrapper on top. Press the edges firmly to seal.

  • Cook the ravioli: Bring a pot of salted water to a gentle boil. Drop in the ravioli a few at a time and cook for 2-3 minutes until they float to the top. Remove with a slotted spoon.
