Hearty Vegan Chili Recipe

Ready in 25 minutes | Makes 6 Servings


INGREDIENTS

  • 1 package chipotle black bean veggie burgers, or vegan burgers of your choice

  • 2 - 15 oz cans red kidney beans, drained and rinsed

  • 1 - 15 oz can chili beans with liquid - read label to ensure they’re vegan friendly

  • 1 - 24 oz jar chunky salsa, use your preferred spice level

  • 1 large bell pepper, diced - any variety

  • 1 large onion, diced - any variety

  • 1 ½ cups water

  • 2 Tbsp soy sauce

  • 2 Tbsp brown sugar

  • 1 ½ Tbsp chili powder

  • 1 ½ tsp dried oregano

  • 1 tsp garlic powder

  • 1 tsp smoked paprika

  • ½ tsp ground cumin 

  • ¼ tsp cayenne pepper

  • Tortilla chips (optional)

PREPARATION

  1. Heat a large pot over medium heat. Add a few tablespoons of water or oil, along with veggie burgers, diced bell peppers and onions, soy sauce, and brown sugar. Cover with a lid and cook for 3-5 minutes, until bell peppers and onion have begun to sweat.

  2. Use a spatula to break apart the veggie burgers into crumbles and saute along with the pepper and onions. Add all of the remaining seasonings and continue to saute for about 1 minute until fragrant.

  3. Add kidney beans, chili beans, salsa, and water and stir until evenly combined while chili comes to a simmer. Cover with a lid and reduce the heat to medium-low. Continue to cook for another 15 minutes, stirring occasionally.

  4. Turn off heat and set aside for 10 minutes before serving. Serve with tortilla chips or your preferred toppings and enjoy!
