Hearty Vegan Chili Recipe
Ready in 25 minutes | Makes 6 Servings
INGREDIENTS
1 package chipotle black bean veggie burgers, or vegan burgers of your choice
2 - 15 oz cans red kidney beans, drained and rinsed
1 - 15 oz can chili beans with liquid - read label to ensure they’re vegan friendly
1 - 24 oz jar chunky salsa, use your preferred spice level
1 large bell pepper, diced - any variety
1 large onion, diced - any variety
1 ½ cups water
2 Tbsp soy sauce
2 Tbsp brown sugar
1 ½ Tbsp chili powder
1 ½ tsp dried oregano
1 tsp garlic powder
1 tsp smoked paprika
½ tsp ground cumin
¼ tsp cayenne pepper
Tortilla chips (optional)
PREPARATION
Heat a large pot over medium heat. Add a few tablespoons of water or oil, along with veggie burgers, diced bell peppers and onions, soy sauce, and brown sugar. Cover with a lid and cook for 3-5 minutes, until bell peppers and onion have begun to sweat.
Use a spatula to break apart the veggie burgers into crumbles and saute along with the pepper and onions. Add all of the remaining seasonings and continue to saute for about 1 minute until fragrant.
Add kidney beans, chili beans, salsa, and water and stir until evenly combined while chili comes to a simmer. Cover with a lid and reduce the heat to medium-low. Continue to cook for another 15 minutes, stirring occasionally.
Turn off heat and set aside for 10 minutes before serving. Serve with tortilla chips or your preferred toppings and enjoy!
