Loaded Vegan Fries
Makes 4 Servings | Ready in 30 minutes
Ingredients
Chix’n Filling
1 block Extra-firm tofu, sliced into strips
1 cup Cornmeal
Seasonings: garlic powder, onion powder, smoked paprika, cayenne, salt, and black pepper
Wraps and Toppings
4 large Tortilla wraps
8 large leaves Romaine lettuce, shredded
2 medium Tomatoes, sliced
½ cup Shredded Vegan Cheese (optional)
Creamy Spicy Sauce
⅓ cup vegan mayo
1-2 tsp hot sauce, to taste
Garlic powder
Paprika
Preparation
Prepare the Tofu
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Slice the pressed tofu into strips.
In a shallow bowl, mix the cornmeal with 1 tsp garlic powder, 1 tsp onion powder, 1/2 tsp smoked paprika, a pinch of cayenne, salt, and black pepper.
Toss the tofu strips in the seasoned cornmeal until evenly coated.
Place the coated tofu strips on the prepared baking sheet and bake for 20 minutes, flipping halfway through, until crispy and golden.
Make the Creamy Spicy Sauce
In a small bowl, mix the vegan mayo, hot sauce, garlic powder, and paprika.
Taste and adjust the seasoning or spice level as desired.
Assemble the Wraps
Lay a tortilla flat and spread 1–2 tsp of the creamy spicy sauce in the center.
Add shredded lettuce, a few slices of tomato, a slice of vegan cheese, and 2–3 pieces of baked tofu.
Fold the tortilla into a wrap: fold the bottom up, then fold the sides inward.
Optional Step: Toast the Wraps
Heat a dry skillet over medium heat and lightly toast the wraps for 1–2 minutes on each side until golden and sealed.
