Breakfast Scramble Pizza

This vegan Breakfast Scramble Pizza a fun take on breakfast that's easy to make and amazing to eat! Made with vegan-friendly crescent roll pastry dough, this breakfast dish is endlessly customizable using your favorite ingredients. This recipe is made with a tofu scramble base loaded with diced peppers and onions, chopped vegan bacon, and a sprinkling of shredded vegan cheese.

 

Ready in 30 minutes | Makes 8 slices


INGREDIENTS

  • 1/2 - 14 oz block firm tofu

  • 2 Tbsp vegan butter or vegetable oil of choice (you can also use water to reduce the oil in this dish)

  • 1 package crescent roll pastry dough (check ingredients to ensure it’s vegan-friendly)

  • 2 Tbsp nutritional yeast

  • 1/2 tsp Indian black salt

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/4 tsp ground turmeric

  • 1/4 smoked paprika

  • 1/4 cup diced onion

  • 1/2 bell pepper diced, any variety

  • 1 cup chopped vegetables of choice, we used spinach

  • 4 slices vegan bacon, chopped

  • 1/2 cup shredded vegan cheese of choice


INSTRUCTIONS

  1. Preheat the oven to 400 degrees F.

  2. Heat a large pan over medium-high heat. Add vegan butter, oil, or water and heat for a few minutes until melted/sizzling. Add diced onions and bell pepper and lightly sauté for about a minute. Crumble the tofu into the pan and season with all of the spices. Continue to sauté all of the contents of the pan for another 2 minutes before adding the chopped vegan bacon. Sauté for another 2-3 minutes until all of the ingredients are fragrant and thoroughly heated through. Turn off the heat and set aside to cool for 5-10 minutes.

  3. Open the crescent roll package and unroll onto a parchment lined baking sheet. Roll up the edges of the pastry dough to create a border that is about 1/4 inch thick on all sides. Sprinkle the pastry with about 1/2 of the shredded vegan cheese within the border. Next, evenly layer the tofu scramble mixture on top of the vegan cheese, then top with the chopped vegetables. Finally, top with the remaining shredded vegan cheese.

  4. Bake for 15 to 20 minutes until crust is golden brown. Remove from the oven and allow to cool for 5-10 minutes before slicing and serving. Enjoy!


TIPS

  • Black salt, also known as or kala namak, is an Indian volcanic rock salt. It is commonly used in vegan dishes to provide an egg-like flavor due to the significant presence of naturally-occurring sulfur in the salt. It can be purchased in Indian markets or online here and here.
