BBQ Chickpea Burgers
Makes 6 Burger Patties | Ready in 40 minutes
Ingredients
1 - 15 oz can chickpeas, drained and rinsed
3 Tbsp chia seeds
1 cup frozen diced butternut squash, steamed until tender
1 tsp garlic powder
1 tsp onion powder
½ tsp smoked paprika
1 Tbsp soy sauce
¼ tsp salt
1 Tbsp bbq sauce + more for serving
Hamburger buns
Baby spinach or leafy greens of choice
Coconut or avocado oil
Preparation
Combine chickpeas, chia seeds, butternut squash, spices, soy sauce, salt, and 1 Tbsp BBQ sauce in a large bowl.
Mash ingredients thoroughly using a potato masher or food processor until well combined but still slightly chunky.
Form mixture into patties:
Use ⅓ cup measure to portion
Shape into ¼-inch thick discs
Cook patties:
Heat oil in a skillet over medium heat
Cook 2-3 patties at a time
Cover and cook 5-6 minutes per side
Aim for deep brown coloration
Assemble burgers:
Place patties on bun
Top with baby spinach
Add BBQ sauce and desired condiments
Serve immediately
